While at the store, I happened across some yummy raspberries and big juicy strawberries. They beckoned me to take them home. I spent half the day thinking about all the ways these strawberries could be used. I’m all about using what I have first and found all the ingredients needed for a simple icebox cake. Even had perfectly ripe bananas. Yes!
What I used for this recipe:
1 x 3.4 oz box vanilla pudding
1 tub whipped topping
1 ½ to 2 cups milk (or whatever the pudding instructions suggest. You can substitute with coconut or nut milk too.)
14 graham crackers
2 to 3 cups strawberries, sliced
2 bananas sliced
Prepare the pudding as per instructions. Leave it to set for 5 minutes. Add in the whipped topping and fold until completely incorporated. In an 8 x 11 or 9 x 13 (whichever you find works best for you), spread a thin layer of pudding mixture onto the bottom. Top with a single layer of graham crackers. They don’t have to be packed in tight, side by side. Top the graham crackers with a generous layer of pudding mixture, a layer of strawberries and bananas, a thin layer of pudding mixture again and follow with the second layer of graham crackers. Repeat on top of this with a generous layer of pudding mixture, topped with strawberries and bananas, et voila! That should be everything used up in layers and turned into an easy, peasy icebox cake! Refrigerate for an hour before serving, garnish and enjoy!
